Oh no, that wont matter. When your Pokemon evolves, it will redeem it's EV'd stats back

Hey and for gens 1-4 it doesn't matter if the Pokemon has evolved or not. Just try to have a lot of experience points (for gens 1-4) so you can get a lot of EVs before you level up. Of course, the mechanics of Black and White are very different. For Black and White, leveling up fast wont matter, your Pokemon could be at any level and have great results in Black and White.
