According to me, Naruto's final shinobi arc dragged on forever.

It would have been great if that wasn't the case.

I thought I would escape this by watching shorter shows, but the original Fate/Stay Night is a snooze fest for the first several episodes. Now I see why the fans don’t like that iteration.

Well, one piece, dragon Ball z are still ongoing too.
I am not surprised and if I remember correctly there is another series that has over 2000 episodes and started around the time of world war 2

Yeah, but they have changing/evolving story line. Far as I'm aware, Conon is still using the same story.
