Before I put my own opinion on this, I must say, each of these games hold both extreme value and importance going forward not just for Sony, but gaming as a whole.
With that said, I think Shenmue 3 is the most important revival of the three because it shows that it's possible that gamers can make revivals happen if you SHOW a company you want it.
Even though the kickstarter was 2 million for Shenmue 3, common sense tells you they need way more.
But now they SEE people are willing. SO that makes a company earnest about pushing forward.
This could spark other games companies left dormant that fans desire.
I've never played Shenmue before, or even heard of it honestly, but I think that Final Fantasy is probably the bigger of the 3 here. It's a huge nostalgia hit for older gamers, and may introduce a whole new audience to the classic series.
Ok, the hype for Last Guardian has more to do with the lineage of the creators, Team Ico. If you played Ico or Shadow of the Collosus, you can see team Ico are masters of story telling through atmosphere and gameplay.
They literally tell a story without saying a word. The closest thing that comes near it was the indie game "Brothers: A tale of two sons". And that's considered a classic in it's own right.
Shenmue is a series that was meant to be the Dreamcast's flagship franchise. The only problem is was for as great as it was, it sold like crap.
But the cult following behind it grew so strong over the years that it turned into a phenomenon of sorts.

At first glance, I would have said FF7 was the most important of the 3. But when I really give it thought, Shenmue 3 is the most important issue. FF7 is just the most popular one.
The Shenmue 3 one can and will effect how other classic franchises are revived in the future for gaming as a whole. The Shenmue situation is bigger than the Shenmue franchise itself.
Shenmue 3 is the biggest news for me in this year's E3. The teaser made my hair stand on it's end, this is really huge. We'll be able to finally see the continuation of the story from Shenmue 1 and 2. For those who don't know, Shenmue was first released on the Sega Dreamcast in 2000, and it was revolutionary for it's time. It introduced open world gameplay and the quick time events that we see today in games like God of War 3. It's a phenomenal game and it is great that they're remaking this. Kudos to Sony and Sega, this will be awesome!
Has to be FF7 for me, was a good decision considering the hatred towards the PC port for PS4. The Last Guardian I still need to see more - looks like a game that wont be great because of development issues.
Pretty much the Last Guardian is a thing simply due to the universal love of Ico and Shadow of the Colossus as previously stated, those games are irreplaceable masterpieces of their time. Unfortunately, I've been so long without any good reason to look forward to it that I've lost quite a bit of hype.
Shenmue looks interesting, but I actually hadn't heard of it before E3 this year. So that leaves me with the FF7 remake as one of the more interesting things I've seen, and I'm looking forward to see what they can accomplish.
I think that Shenmue 3 had me the most excited, but I understand that it's 14 fricken years old, the lifespan of the dreamcast was incredibly short and the final nail in the coffin for sega. These factors mean, most people, like the commentators who, think WTF is Shenmue? Because most gamers today were not born, or in diapers still when the first 2 games came out! Most gamers are in the 12-16 year old age bracket. And E3 always appeals to "core" gamers, and focuses on "western" games. I am really surprised they chose to announce this at E3, as opposed to for example, Tokyo Game Show, or even Anime Expo, would have been more of a "target" audience....
But yet.... it's the little life simulator that could.... despite maybe not having the right target audience, the fact is, that the WORLD WENT NUTS when the kickstarter was announced. It broke ALL records of all time for the fastest funded kickstarter and fastest kickstarter to reach $1 Million in funds. It's in the Guinness book of world records now. And probably will be staying there for quite some time.
Of course, FF7 is also well known, even among the new generation of gamers. It was the first rpg for many people; not me, who had been playing them since the 16 bit era, but for lots of people, it holds that special place in their heart). It's also been requested by fans for years. FF7 is 20 years old now, I was 13 or 14 when it was released (depending what month it came out) and I'm much older than most people in this hobby. Square has been saying for years it's not possible to remake on modern systems due to the amount of resources it would take. (both taxing of the system running the game, and also resources as in $$$ ). So it's pretty neat to see them "change their mind" and give it a shot. We have not seen gameplay footage or know much about it yet though. But most fans are probably looking forward to this title way more than the other 2 mentioned in this thread.
My opinion of Last Guardian is very low, and I did play and love ICO... I just think the gameplay and controls look HORRIBLE in Last Guardian. I understand it's "demo footage" but man, that just does not look any fun at all to me.
I don't know much about the last guardian so I won't say anything about it but as far as the other two..
Shenmue is really really huge, not only have they broke some records with their kickstarter funding even Sony is investing and backing the developement of the game. Shenmue was a great game during the old days and its great to see it being brought back maybe this will show the current gen game devs how they should be producing a game??
FF7 remake makes me very happy. I have not liked the direction of Square Enix for the longest time and I hope this will make them change how they've been doing games, assuming its not just only a remake but a attempt at rebooting Final Fantasy in a sense. It's just as good as everything else.
They are all good in the sense that we are going to see a big increase in the RPG genre, and this should hopefully let more devs know that players want this type of game.
FF7 is just a remake, so whatever. It's a huge jump from PS1 to the current gen, sure, but it's still a remake and not a truly new game, so meh. Though they keep saying they're gonna change things up, which might be good or might be bad, we'll have to wait and see.
Shenmue 3 is fantastic because it's the ending to a series that has been a long time coming and The Last Guardian is from a developer that so far has only released masterpieces like ICO and Shadows of the Colossus so it's hard to not be hyped. Though I'm sad The Last Guardian is coming only to PS4 now instead of PS3, it doesn't look graphically impressive enough make me think it wouldn't work on the PS3.
