I love older RPG's like Baldur's Gate 1 and 2, Fallout 1 and 2, Arcanum, etc.
But unfortunately it seems like they just don't do that kind of games anymore, every RPG is a lot less in depth nowadays and generally not as fun.
Is there anything more recent that is like these games? The closest I've found is Shadowrun Returns.

Well, you're in luck!

Divinity Original Sin just got released today. The game is a turn based RPG that relies heavily on stats and can be played in co-op. It also features an in-depth crafting system, stat based choices and an awesome soundtrack of over 100 songs! As a bonus, the game ships with an advanced editor that you can use to modify the official campaign or to create original content. Check it out, it's great fun for a classic RPG lover.

I was going to mention Divinity Original Sin too. I just grabbed it the other day and hope to play it with the lady. May want to give YouTube videos a glance and see if that's somewhere up your alley. Interestingly enough, the game was funded through Kickstarter too.

I enjoy a lot of classic RPGs like Final fantasy (pre 7) and breath of fire.

You can try the first Elder Scrolls games, the first 2 are really old and PC only, the 3rd/4th ones are available for Xbox 360. Also Fallout 3 and New Vegas are amazing, even though they're newer than 1 and 2.

Yeah, there was a lot of great RPG games back in the days. Right now, I think the most popular one is Minecraft. There's a lot of people playing it right now, and it is at the top in terms of popular games. I personally still play this game, well sort of. I heard that it recently sold over a million copies or so, which is pretty amazing!

I have never really played an RPG game but I would like too. So I may try out some of the games you have listed. They sound fun! :)
