Do you listen to the anime ending at the end of every episode?

Depends how good it is, though most animes don't really have good ones. The longer running animes tend to get some very strange ones.

It is pretty rare to have good anime endings. Best ones I can think of were in Black Butler, Fullmetal Alchemist and Psycho pass. Long running ones like Bleach or Naruto had maybe one good ending out of 3-4.
