Do you use custom keyboard apps for touchscreen smartphones, and tablets?

Yes, I use custom keyboard apps in Google Android. I don't really like the default keyboard in Android.

I use Classic Keyboard for Android because it loads fast, and it uses less screen space than the regular Android touchscreen keyboard. The spacing between the keys are also not tightly packed together. It is also only 1.8MB in size, so it does not use a lot of storage space compared to other keyboard apps.

The new Google Keyboard does look pretty nice, but I find the RAM usage of around 30MB kind of high when other keyboards like Classic Keyboard use less than 10MB according to the Running Apps section in Android App settings.

for a phone, unless a high end one, is a bit much.

I agree Keyboard apps which use 30MB of memory is a bit much since a lot of slower phones are still using 512MB of memory, and usually the memory is shared with the video chip on the phone, so some phone with only 512MB of memory may only have 256-384 MB of usable memory because 128-256MB of RAM is dedicated to the video chip.

Apps like web browsers, video players, and games uses a lot of RAM, so having more free RAM will make apps like web browsers,  video players and games not slow down as much.
