Maybe you yourself do not like to speedrun games, but prefer watching, for interesting niche knowledge and seeing the game through someone who knows what they are doing. It can be any genre. It can be a game you played a lot as a kid or liked how visually appealing it is to finish optimally. To be honest I love the 3D platformer genre in speedrunning. It's simple, yet effective knowing all your movement options, clipping shortcuts, and even some technical stuff like proxies.
I like to see speedruns of:
The Spyro series (mostly the first three for the visuals)
The Smash Bros Series
The Pokemon Series (the RNG abuse is super interesting and technical)
Maybe the Wario Land Series as well, but never really thought of watching for very long. That's more of a longplay-centric game.
