Favourite Simulation Games?

I do mean ones that simulate real life. Aside from "The Sims", I don't think I've personally played anything else like it. And I TBH am not too keen on this genre of games. What about you? Have you ever played any or not yet personally? And if yes, do you enjoy them or not per

My current favorite is DCS Combat Flight Sim and years before DCS came out it's the old Jane's Combat Flight Sim Series.
