Those two pictures you've labelled as Master Quest aren't. You can tell because Link is still holding his sword in his left hand, but in Master Quest it's reversed.
 
They could've put some more effort into the character models. Link looks great, but Zelda, Ganondorf, Impa, the horses, etc.. Not so much.
 
Is it? Or are you thinking of the "Mirror Mode"?
The 'mirror mode' as you call it is the Master Quest. There are only two games mades available - normal, and Master Quest, which is mirrored and much harder.
