I'll do these in one post each, because I haven't the time to put one large list together, so come back!!!
Skyview Temple- Demon Lord Ghirahim.
Stage 1- Do not swing wildly!! At this stage, Ghirahim will grab your sword with a glowing red hand. Should your sword be grabbed, now is the time to shake wildly!!! If you fail to break free, Ghirahim will take your sword. Walk away from him and dodge your sword when he throws it at you. Then run to your sword and pick it up.
However, a fairly skilled player shouldn't worry too much about the above if they follow these guidelines. The aim is to lead Ghirahim into believing you'll strike from one side, but attack from the other. Or, alternatively, you can hide behind your shield and strike unexpectedly. Rinse and repeat.
Stage 2- After a few hits, Ghirahim will jump back and lick his lips. He'll then summon a sword to fight you with. He now employs three different strategies:
1. If you're at a distance, he may summon a set of daggers to fly towards you. You can either sidestep these or shield bash them back at him.
2. However, he may also use a dash attack. He will make a "Huh!" noise and start running towards you. Timing your shield bash to coincide with the swinging of his sword will knock him off balance, allowing you to score a few extra hits.
3. He may teleport behind you and hold his sword at a particular angle. Simply swing from the opposite direction to score a hit.

Important notes for Ghirahim: Shield bashing back the daggers can kill him even if you don't land a single blow! So for a speed run, be sure to hit back as many as you can. Also, when he charges at you, if you have trouble timing the bash, you could always jump back and then stab forward to begin your counterattack.

I'm interested to see your strategies; I played through one way, opened the guide book and found several different ways to take down each boss. I didn't do much with the time trials the first time around though, so I don't remember what my times were.
 
Earth Temple- Scaldera.
Scaldera is basically a big ball of fiery rock, so contact with him will cost you hearts. Basically, the bigger your bomb bag is, the better. You start at the top of what appears to ba large slide. Scaldera will start running towards you, charged with some sort of electrical fire. After a while, this will run out and he returns to his normal form. Now, Bombs Away!!! The bomb will explode on contact, forcing him to roll down the slide. Chase him now. Eventually he'll stop and take a deep breath. As he's sucking in air, roll a bomb into his mouth and attack the exposed blue-red eye (triumphant music plays when you're able to do this). Rinse and repeat. If you miss rolling the bomb into his mouth, he'll release a series of fireballs. Don't hold any bombs while he's doing this, just dodge quickly.

I'm half good half suckish at skyward sword with the guide...my favorite part is when Link brakes the chandelier at the lumpy pumpkin It's freaking hilarious when everyone freaks out even though It's a game.

An important note for Scaldera is that it also has a second phase of attack. In this phase it will move faster, but more importantly, it will stretch out its legs and try to go over your head before dropping down and rolling towards you. So instead of bombing it to knock it down like you did before, you should now stick to the middle so the legs don't hit you, then dodge at the last second to the side as it rolls down and run after it to throw (or roll) a bomb into its open mouth (if you dodge too early it can change direction and come to get you still). Also, the "safe zone" at the top is no longer safe as it can climb all the way up if it has to, before rolling back down the slope.

Whoops, Sorry. I'm writing my guide through boss rush mode, so that sometimes doesn't happen....

Lanayru Mining Facility- Moldarach.
To be honest, I struggle with Moldarach but I'll give you my strategy anyway.
Stage 1- Molddarach has 2 basic moves at this stage. He'll try grab you with his claw, or swoosh his tail around to hit you. Before he makes any attack however, you should hear a strange noise (not quite sure how to write it down). If the marker on one of his claws goes red, he's going to attack you with that claw. If neither go red, he'll slash with his tail. Destroy the muscles in his 2 claws for Stage 2.
Stage 2: Moldarach will burrow into the floor, leaving a tell-tale bulge wherever he goes. Use the Gust Bellows to blow away the dirt to reveal him. However, be careful as his tail will try to attack you as you're above him.
When you blow away enough dirt he'll jump up. Another blue marker will be revealed, however this is better protected. Only a stab will damage it. Moldarach has 2 attacks here, a charge attack, and a stabbing attack with his tail, but these are fairly easy to predict.
Repeat this a few times to win the battle.

Ancient Cistern- Ancient Automaton Koloktos.
Stage 1-
Koloktos remains in the middle of the room. 2 of his hands are covering his 'weak point', 2 are holding axes and 2 are empty. Koloktos has 2 main attacks at this stage. These are to throw the axes, if you're at a distance. Or, if you're up close, he'll slam his fist into you. The trick is to make him use the fist attack, but dodge it, causing his fist to be stuck in the ground. Use your whip, Z-target the link on his arm and whip it off. When you've taken off the two spare arms, he'll now use the arms that were previously covering his weak point in the same style attack. Only now his weak point is open, so you can attack it. After a certain amount of damage, he'll cover up his weak point again and resume the same tactic. (Note: After the first time he takes damage, he'll swipe at you if you're TOO close, so balance is important).
Stage 2-
After Koloktos has taken the required amount of damage, he stands up and pulls 6 swords. He also covers his weak point with a grating. He uses the same "slam your arm into the ground" attack as before, only now it's harder to dodge as he uses three of his arms. But your reaction still needs to be the same. Z-target the links and use your whip to pull his arms off. Now, the game will delightfully pause the action and zoom up on a sword. You are now able to pick up these dropped blades. These can lop off Koloktos' parts quite easily, but you only have your vertical/horizontal slashes available. You can either chop off his remaining arms, and then he'll charge at you like a bull, or chop his legs off, which leaves him looking like the Black Knight from Monty Python. Use horizontal slashes to remove the railings and then batter the weak point with as many slashes as possible.
Once you've dealt enough damage he'll yet again regenerate. But now he adopts 2 more tactics. He'll summon 3 cursed Bokoblins to occupy you while he attempts to hack you to pieces. Just deal with them and get back to batling him. His other tactic is to swing his swords wildly. Just run basically. Pillars crumble like dust before him. If you're aiming for a good time, deliberately take damage to stop his attacks. Once you've dealt enough damage in this stage, the fight ends.
