I've decided to add a gaming rig to my setup, and like some feedback on what I should aim for that I can play the FF 7 remake series (and other games) rather well? I'm not looking for anything beyond 2kish.

I've been hearing now isn't the best time to build a gaming PC because RAM prices are to the sky.

Indeed. Though the wait for the RAM prices to go back down could be really long...

RTX 5070 can also play FF7 Remake series nicely too currently it's around $519 -$600, +/- $150 cheaper than the RTX 5070ti. Though the price will increase next year...

Is AMD really better than intel these days?
Intel redeemed itself with core ultra 7 270k plus. No more degradation due to voltage instability issue. It's cheaper than amd ryzen 9 9950x3d. Gaming peformance wise ryzen 9 9950x3d peforms better at 1080p to 1440p but close with ultra 7 270k at 4k. Though this could depend on the game. If your gpu can do 4k well in games core ultra 7 270k is the better pick because of the cheaper price but if your gpu is not strong enough to do 4k then ryzen 9 9950x3d is the better pick. But at the end of the day it's better to invest more on the GPU rather than the CPU for gaming. The Intel Core Ultra 7 270K Plus costs around $303 and the ryzen 9 9950x3d costs $669 to $699. You could save that extra $360ish for the GPU instead with Intel Core Ultra 7 270K Plus.

Also the RTX 5060 has only 8GB VRAM and will micro stutter after long play session running Rebirth during the open world exploration even on the lowest texture setting. Rebirth needs more than 8GB of VRAM during long play sessions when exploring the open world due to VRAM usage leaks that accumulates over long play sessions. NVIDIA re-release the rtx 3060 with 12 GB VRAM a better choice imo because of VRAM amount for Rebirth.
