Cutting Vegetables

Saw this the other day, so I take it Japanese made cutting knives/sushi/sashimi knives for food are also very very sharp?
 
To be fair, it costs more to buy them pre-cut.

Pre-cut vegetables are sometimes less fresh because they got cut with a knife, and the vegetable skin is peeled off. The vegetable factory may buy cheaper vegetables which are older and less fresh.

Pre-cut vegetables maybe less healthy because they have been stored in a plastic bag for a long time, and the plastic bags' chemicals gets stuck on the vegetables. With non-bagged vegetables, you can use a paper bag, cardboard box or basket to buy vegetables if you are concerned with plastic sticking to your vegetables like mushrooms and beans where you can also eat the vegetable's skin.
 
But you can cut vegetables with a Katana easily lol.

Here we can get the potatos that is washed and unwashed. Unwashed one is cheaper of course.
Huh? They are going to chop the potatoes for us... They could wash them before cutting them right?
I don't see the reason why they wouldn't do that in the first place
