Which Mario bosses would you consider the easiest and hardest and why? Me personally, I'd say these:
Main series
Easiest: Morton or Roy in Super Mario World, because you can kill them in about ten seconds by hitting them three times before they even reach the left wall of the arena. In a 3D game, it'd probably be a toss up between the Chill Bully in Snowman's Land in Mario 64 and Topmaniac in Super Mario Galaxy.
Hardest: Not an easy decision to make here, none have really been 'hard' so to speak. Possibly giant Bowser in New Super Mario Bros Wii or Daredevil Bouldergeist from Super Mario Galaxy, although both can be beaten fairly easily if you know how.
RPG series
Easiest: Not counting tutorial bosses (so no Bowser from Superstar Saga/Bowser's Inside Story or Lord Crump from Paper Mario 2), then probably Doopliss's first form from Paper Mario 2. Likely intentional because of the whole identity theft thing that occurs afterwards, but you win the initial battle in seconds.
Hardest: For a standard battle, then the Elder Princess Shroob in Mario & Luigi Partners in Time. God, that battle can takes HOURS if you aren't sufficiently leveled up, and the fact you've got to take out all the boss' defences first before you can do absolutely anything makes it even worse.
For a more non standard battle, the Fawful Express from Mario & Luigi Bowser's Inside Story is a terrible, terrible boss battle to be stuck playing. For starters, the boss is only weak to Bowser's fire attacks. So you're basically dependant on the DS microphone when it comes to doing any damage whatsoever, and you need to do damn well with every attack to kill it in time (because if you take too long, it crosses over a bridge, Bowser falls through and you get an instant game over). And that microphone is way, way too bad at recognising input, so you're probably killing your lungs in the process just trying to perfect every attack.
Did I mention this boss has a lot of different ways to kill you? Yeah, I don't want to ever play that battle again. I recall even bringing in an electric fan at one point to just avoid running out of breath.
Spinoffs
Easiest: That minotaur guy from Wario Land 1. Punch him, pick him up, chuck him off the edge to his instant demise. This guy and Big Bully from Mario 64 are good examples of why platformer villains tend to either float in mid air or have some way of getting back out of lava pits.
Hardest: If you count 'daredevil' modes, then probably the Mole Train from Donkey Kong Country Returns in Mirror Mode. That level is already hell with another healthbar, let alone when one hit kills you instantly. If you don't, possibly the Shake King from Wario Land Shake It. How that guy can someone spam lasers and lightning bolts I don't know, but he can be quite the annoying enemy to dodge as a result.
