Mine would be FF6. I love Nobuo Uemetsu (To Zanarkand and Clash on the Big Bridge are also awesome), but I also like Koji Kondo.

I loved the music in Sunshine (namely Delfino Plaza) and Wind Waker (Great Sea).
And in Chibi Robo the Giga-Robo and Captain Plankbeard themes.
