Why don't we get to directly beat up Bowser in most modern Mario platformers?

Okay, it's sort of getting better with New Super Mario Bros U, which actually has Mario slam into his head with the Koopa Clown Car. But how come most other modern Bowser battles are just glorified chase scenes with a short action in the end?

Because to be honest, I always preferred how it worked in the likes of Super Mario World and Super Mario 64. Where you were in a boss arena, got to throw him around/send things flying towards him and watch Bowser get flung around like a pinball in the process. Much more like a battle than a chase scene.

So what do you think? Why are almost all modern Bowser 'fights' either a bridge sequence or a chase scene?
 
I'm not sure. I know it's not because Nintendo can't think of anything. I mean they made him a fricken cat for crying out loud so I know they could come up with a good final fight with Bowser. It can't because it's more child friendly. Not unless watching Bowser burn to death is child friendly. I did enjoy the Bowser fights from Super Mario 64. It would be nice to have something similar in the next Mario game.
 
Super Mario 3D World had a great ending up until the point where you actually beat him. A rooftop showdown would have been cool but all you have to do is hit the giant POW block sitting at the top. Not much challenge to that. Wish they would go back Mario actually fighting him.
